August Bites
What’s in season this month? Here are a few bite-sized tips to use when shopping for fresh produce in August.
1. Stock up on citrus
Oranges, grapefruit, lemons and limes are a sweet and nutritious hit this season. Loaded with vitamin C, these bright balls are truly nature’s candy and are a great way to stay healthy during the chilly season.
2. Stew some rhubarb
Top your porridge or muesli with a spoon of homemade stewed rhubarb this August. It’s both delicious and healthy, containing antioxidants and Vitamin K (and is not as difficult to prepare as you might think). Cut your rhubarb into chunks and cook in a saucepan over low heat for ~15 minutes with a tablespoon or two of water and a sprinkling of sugar. Stir often to avoid it sticking to the bottom of the pan.
3. Bake broccoli
Beat the Winter blues by mixing things up and adding broccoli to your standard roasted vegetable mix. After partially roasting some pumpkin and parsnip, add chunks of broccoli, season with olive oil, salt and pepper, and roast for an additional ~20 minutes until cooked and fragrant. Add this to a cooked grain such as freekeh, brown rice or quinoa along with some grilled salmon. Dress with lemon juice and top with toasted almond flakes for a lovely, healthy, filling mid-week meal. Don’t forget to save some leftovers for lunch!
